This is a first for me – a recipe. It may surprise many of you to learn that I am a great cook. Did you know I invented cheese sticks in the early eighties? True story.
I came up with the chicken on chicken burger recipe last summer for the outdoor grill. Since it’s winter in Michigan we made this awesome dinner in the kitchen today. Fair warning, this is about as unhealthy as it gets but they taste great. If you decide to tackle this little project just have some fun and alter the recipe to your liking.
Chicken On Chicken Burgers With Bacon
Makes six burgers or eight fajitas
Ingredients:
Spicy Chicken Patties, 6 each
Chicken Breast, 1 lb. or 3 fillets
Green Bell Pepper, 1 each
Red Pepper 1 each
Small Onion 1 each
Fajita Mix 1 package
Swiss Cheese, 6 or 8 slices
Mild Cheddar Cheese, Shredded
Bacon, 1 lb.
Butter or Canola Oil, 2 tbsp.
Flour Tortillas, warmed, 8 each (for fajitas only)
Garlic, 1 clove
Fresh Mushrooms, 1/4 cup
Marinade Ingredients:
Worcester Sauce, 8 oz.
Beer, 1 can
Garlic Powder, 1/2 tsp.
Optional Ingredients:
Sour Cream
Tomato
Green Or Red Chile Peppers
Marinade Directions:
Mix Worcestershire sauce, garlic and beer together and use to marinade the chicken breast in the refrigerator for 3 to 4 hours.
Directions:
- Cook the spicy chicken patties in the oven according to the package directions.
- Chop the green pepper, red pepper and small onion and mix together.
- Chop and dice garlic and add to the pepper and onion mix.
- Sauté the bacon, garlic, pepper and onion mix in butter or canola oil.
- Shred the marinaded chicken breast into one inch pieces.
- Mix the fajita mix with the chicken breast pieces.
- Slowly cook the shredded chicken breast until brown and tender.
- Add the shredded chicken breast with the sauteed mix.
- For the chicken on chicken burgers place chicken breast mix over a spicy chicken patty. Top with mild cheddar cheese and/or Swiss cheese.
- For the chicken on chicken fajitas slice the spicy chicken patties into strips. Add with chicken breast mix into flour tortillas. Top with shredded cheddar cheese.
- Serve on buns, open faced bread or soft tortillas

This would also be my very first ever comment on a recipe post. The pictures here alone is probably telling my taste buds more than what the text is expressing as I’m actually salivating right now.
My only experience with cooking was way back in college when we have no choice but to take a few units of Home Economics. If being a good and avid ‘taster’ of my fellow students’ cooking work was given credit, I would have gotten an A+ then.
I’m not good at cooking but I do appreciate mouth watering and tasty food. I hope my wife can do this recipe. Hmmm… I am familiar with all the ingredients here except for one. What is a Fajita mix?

Hi James, my wife and son were doing the cooking while I was getting in the way with the camera. I can cook but don’t really enjoy it all that much unless it’s out on the grill. Then I can throw down some great food.
Fajita seasoning mix comes in a bag found in the grocery store’s spice section usually by the taco Seasoning mix. It’s pretty cheap and it’s a lot easier than adding your own spices.

Yeah Brian, the backyard and the grill is our turf in the cooking arena. I have yet to see a scene in movies (or still pictures) where a woman was lording it over the grill in the yard.

I think I’ll use the subtle approach here. I’ll leave the computer with this recipe page on and pretend to doze. I’m sure my wife will check out what I’d been surfing online the next time she passes by to do her chores around the house. I hope she gets the suggestion.
